A popular Guatemalan chicken chain has now opened in Brooklyn Center. Pollo Campero celebrated its grand opening on Tuesday morning at Shingle Creek Crossing. The company chose this location due to the area’s demographics and the support from the city’s economic development team.
Blas Escarcega, Pollo Campero’s vice president of franchise development, explained that many customers from the north side were traveling to their West St. Paul location, and they saw an opportunity to serve them better by opening closer.
The new restaurant is at 1340 Shingle Creek Crossing in Brooklyn Center. Established in Guatemala in 1971, Pollo Campero is known for its signature fried chicken, marinated to the bone using recipes passed down through generations. “The flavors are great, and the chicken is tender, crunchy, and juicy,” Escarcega said. “It has a uniqueness that makes you crave it again.” This marks Minnesota’s second Pollo Campero, with the first opening in West St. Paul over ten years ago.
